Materials

  • 2 cups all purpose flour
  • a pinch salt
  • 2 sticks unsalted butter, chunked
  • 1/2 cup cold water plus more if needed
  • 1 jar strawberry preserves
  • 1/4 cup milk or beaten egg for brushing on the edges of the tarts
  • icing/sprinkles of your choice for decorating

Instructions

  • For the Dough:
Combine flour, salt, and butter in a large bowl. With your fingers pinch the butter into the flour until butter is pea-sized and the mixture looks coarse. Slowly add water, folding into the flour until dough comes together. On a lightly floured surface, form dough into a disc and wrap in plastic to refrigerate for at least 30 minutes.
  • On a lightly floured surface, roll dough into a circle that is about 1/8 inch thick. Then roll it up onto the rolling pin and gently lay it out on a parchment-lined baking sheet. Cut rectangles out of the dough approximately 2 inches x 3 inches. You will need 2 rectangles per tart.
In the center of the 1 side rectangle dough, add strawberry preserves, approximately 2 tablespoons each. Cover with the other rectangle. Using a fork, gently press the fork into the dough to form a crinkle all around the sides of the dough. Brush the edges of the dough with milk or egg wash.
  • Bake for approximately 30- 45 minutes, or until the crust looks golden brown.
    Cool slightly before serving.
  • Once the tart is done, it's time to decorate. Choose the icing and sprinkle of your choice!
